PHOTOS: Korean Pop Up Street Food in Lexington, Sandwich Shop 2

In what has been a great year for street food diversity in Lexington (despite bureaucratic lags), Institute 193 added to the mix this week with a week of a lunchtime Korean Pancake Pop Up,  prepared by Chef Johnny Shipley, formerly of Table 310. While Lexington’s Food Truck community is growing, Pop-Ups in general are relatively new and untried here (but are catching on in markets like Detroit).

Every day from Noon to 2, for Sandwich Shop 2, Chef Shipley served up a Pa-Jeon Pop Up — pa-jeon kimchi belly pancakes (crisp, fresh, implausibly light and fluffy), hot off a griddle in the gallery space at 193 Limestone downtown. Five bucks each,  the proceeds benefited Institute 193.

And the pancakes? They tasted of what this town hopes to grow up to be.
