Food: Minton’s and North Lime Coffee and Donuts open in Lexington

North Lime Coffee and Donuts has opened at 575 North Limestone (corner of Sixth and N. Lime, across Sixth from Al’s Bar). By 3 p.m. today, head Donut Engineer Heidi Hays and co-owner Joe Ross were smiling ear-to-ear, saying business was phenomenal and chorusing “We’re covered in glaze!” as photos were shot.

The business is owned by a trio of partners: Hays, a UK grad and former LexMark engineer; Ross, a UK grad with experience in business “and Starbucks,” and Teddy Ray, a minister. Nathan Polly, the owner of the coffee-roasting company was on hand and behind the counter on opening day. Hays, Ross and Polly were all sporting the store’s logo, designed by Homegrown Press artist John Lackey, whose studio is located next door.

The space will have big shoes to fill, located across the street from the original location of Lexington’s world-famous Spalding’s Donuts).

North Lime Coffee and Donuts, Al’s Bar, the neighborhood market, and, according to a sign in the window in the old Spalding’s building, a future business called “Arcadium: Games, Food, Spirits,” are the new Four Corners of the Universe.

Just down NoLi (North Limestone), Chef Ashley Minton has opened Minton’s at 760 (at 760 N. Limestone), with an ambitious opening dinner service menu that includes zucchini pancakes, lemon & thyme mushroom risotto, roasted spare ribs, and more.
